It’s a proven scientific fact that most foods taste better on a stick (citation still pending). And yes, that includes salad. These easy caprese salad skewers take the classic tomato, mozzarella, and basil combo out of the bowl and onto skewers—with the added bonus of seared Italian Herb Chicken Sausage for extra flavor. The result? An easy summer appetizer that works as a no-nonsense (and almost no-effort) cold side dish for any cookout spread… and maybe even a solid reason to retire your salad forks for good.

1 package of Italian Herb Chicken Sausage, cut into 3/4" rounds
1 tablespoon extra virgin olive oil, plus more for drizzling
1 pint cherry tomatoes
12 ounces mini mozzarella balls
28 fresh basil leaves
1 tablespoon balsamic glaze
1 big pinch of flaky sea salt
Freshly ground black pepper to taste

Heat the olive oil in a large skillet over medium heat then sear the sausage rounds on both sides until golden brown, about 2-3 minutes per side. Transfer the sausages to a plate and let cool until safe to touch.

On a toothpick or appetizer-size skewer, skewer a cherry tomato, followed by a small mozzarella ball, a whole basil leaf, and a piece of seared sausage. If there's room on the skewer, add more of whatever you'd like!

Arrange the skewers on a serving platter. Drizzle on more olive oil, balsamic glaze, flaky salt, and black pepper. Serve immediately or refrigerate until ready to serve.
