Longevity Noodles With Chicken Sausage

But we also respect the wisdom of our elders. And if generations of Chinese grandmas tell us that eating extra-long noodles tossed with sauce, vegetables, and chicken will help us live longer… well, we’re listening.

Longevity noodles—also known as changshou mian—have been a Lunar New Year staple for centuries. According to tradition, slurping on extra-long noodles symbolizes a long, prosperous life. Our version leans into that idea with Classic Roasted Chicken Sausage as a lighter, cleaner protein, paired with umami-rich mushrooms, garlic chives, and a simple, savory sauce built on sesame, soy, and oyster sauce. Will they make you live forever? The science is still out. But they’re easy, deeply satisfying, and absolutely worthy of a regular spot in your rotation—and if you happen to make it to 120, you can say you did it deliciously.

Ingredients

Sauce

1 tablespoon sesame oil
3 tablespoons oyster sauce
2 tablespoons soy sauce
¼ teaspoon granulated sugar
½ teaspoon freshly ground black pepper

Noodles

12 ounces dried Chinese egg noodles (such as yi mein)
2 tablespoons vegetable oil
1 package The Sausage Project Classic Roasted Chicken Sausage, cut into large bite-size pieces
8 ounces fresh mushrooms (such as oyster or shiitake), sliced into large bite-size pieces
3 cloves garlic, minced
4 ounces garlic chives, trimmed and cut into 2-inch pieces

Make the sauce: In a small bowl, combine all the sauce ingredients and set aside.

Cook the noodles: Bring a large pot of salted water to a boil over high heat. Add the noodles, stirring to separate, and cook according to package instructions until al dente. Drain and set aside.

Cook the sausage and vegetables: While the noodles cook, heat 1 tablespoon of the vegetable oil in a large sauté pan or wok over medium-high heat. Add the sausage and mushrooms and cook for 5–7 minutes, turning occasionally, until lightly browned. Stir in the garlic, adding a little more oil if needed, then add the Chinese chives and cook for 30 seconds to 1 minute, just until wilted.

Serve: Divide among shallow bowls and serve immediately, then get ready for a long, prosperous life.
