1 package Italian Herb Chicken Sausage
1 teaspoon avocado oil
2 cups jasmine rice, steamed
1.5 cups Tuscan kale or spinach, stemmed, and chopped
1 teaspoon garlic, finely minced
2 lemons, juiced
1 teaspoon lemon zest
1 teaspoon red pepper flakes
0.5 cup low-sodium chicken broth
1 tablespoon unsalted butter
1 teaspoon kosher salt
1 handful of Italian parsley, finely chopped

Steam rice according to package directions.

In a sauté pan, heat 1 tsp avocado oil (or another neutral oil) over medium-high. Add diced chicken sausage and cook until browned and crispy. Remove from pan and set aside.
