Pimento cheese is one of those Southern staples that’s always welcome when it shows up as a snack or side. And while it’s not exactly seasonal produce like asparagus (at least we don’t think it is), it definitely has its moment in the spring, when picnic season hits and the Masters tees off.

Still, as iconic as those little pimento cheese sandwiches are, they could use a little main-character energy. Enter the Pimento Cheese Sausage Dog. It’s exactly what it sounds like: a juicy Melty Cheddar Chicken Sausage tucked into a toasty bun and topped with a generous scoop of pimento cheese—homemade or store-bought, no judgment here. Ingredients

Pimento Cheese

2 cups shredded sharp cheddar cheese
4 tablespoons mayonnaise
1 4-ounce jar diced pimentos, drained
1 tablespoon cream cheese, softened
1 teaspoon yellow mustard
1 teaspoon Worcestershire sauce
¼ teaspoon garlic powder
teaspoon cayenne pepper or paprika
1 tablespoon milk, as needed to loosen

Sausage Dogs

1 package The Sausage Project Melty Cheddar Chicken Sausages
4 hot dog buns (split-top preferred)
2 tablespoons unsalted butter

Toppings

2 tablespoons finely diced red onion
2 tablespoons pickle relish or chopped pickles
1 teaspoon yellow mustard
4 tablespoons pickled jalapeños

Make your pimento cheese: In a medium bowl, combine the cheddar, mayonnaise, diced pimentos, cream cheese, yellow mustard, Worcestershire sauce, garlic powder, and cayenne or paprika. Stir until evenly mixed, adding milk as needed to slightly loosen the mixture.

Cook your sausages: Heat a skillet over medium heat or preheat a grill. Cook the Melty Cheddar Chicken Sausages for 6–8 minutes, turning occasionally, until heated through and lightly seared.

Toast your buns: Butter the inside of each bun, then toast in a skillet or on the grill until lightly golden.

Assemble your dogs: Place 1 cooked sausage into each toasted bun, then top each with about ¼ cup pimento cheese.

Get melty: For a melty finish (totally optional), place the assembled dogs in a 400°F oven for 30–60 seconds, just until the pimento cheese softens.

Finish them off: Garnish with diced red onion, pickles, or mustard, if desired, and serve immediately.
