Ingredients

2 tablespoons olive oil
1 large onion, chopped
Italian Herb Chicken Sausage links, diced (reserve ½ sausage and slice thinly into rounds for topping)
3 large cloves garlic, minced
½ teaspoon dried oregano
¼ teaspoon red pepper flakes
1 28-ounce can crushed tomatoes
2 15-ounce cans cannellini beans, drained
2 cups grated mozzarella cheese
¼ cup grated Parmesan cheese
2 tablespoons roughly chopped Italian parsley, optional, for garnish
Toasted garlic bread, for serving

Heat the oven to 450°F.

Heat the olive oil in a 12-inch oven-safe skillet over medium heat. Add the onion and cook, stirring, for about 3 minutes, until softened and translucent. Add the diced sausage and continue cooking for about 5 minutes, until both the onion and sausage begin to lightly brown.

Next, stir in the garlic, oregano, and red pepper flakes and cook for 1 minute or so, until fragrant. Season with a generous pinch of salt and pepper.

Add the crushed tomatoes and beans and stir to combine. Bring it all to to a simmer, then reduce the heat to medium-low and cook for about 10 minutes, until slightly thickened.

Sprinkle the mozzarella and Parmesan evenly over the beans, then scatter the reserved sausage rounds on top. Transfer the skillet to the oven and bake for 10–15 minutes, until bubbly and golden.

Remove from the oven, sprinkle with parsley (totally optional, totally worth it), and serve hot with toasted garlic bread.
