Start by pulsing Classic Roasted Chicken Sausage in a food processor (or finely mincing it), then mix in spices and tomato paste to create a rich, spreadable filling. From there, it’s simple: spread it over lavash, roll it up, skewer, and bake.

Ingredients

1 package The Sausage Project Classic Roasted Chicken Sausage
1 tablespoon tomato paste
¼ cup parsley, chopped
4 cloves garlic, minced
½ teaspoon garlic powder
½ teaspoon paprika
½ teaspoon onion powder
½ teaspoon black pepper
3 pieces lavash
Garlic-infused olive oil, for brushing
3 wooden skewers

Grind all 4 chicken sausage links in a food processor, then transfer to a large mixing bowl. Add the tomato paste, parsley, garlic, and seasonings, then mix until well combined.

Divide the mixture evenly between the pieces of lavash. Use the back of a spoon to spread and press the meat into an even layer across each piece.

Preheat the oven to 400°F. While it heats, carefully roll each piece of lavash into a log, then slice into 8–9 pinwheels per piece.

Thread the pinwheels onto the skewers, then place them on a parchment-lined baking sheet, positioning them so the skewers rest on the edges of the pan and the pinwheels are suspended above the parchment.

Brush your pinwheels with garlic-infused olive oil. Bake for about 12 minutes, then flip the skewers and brush with more oil. Continue baking for another 10–12 minutes, until golden brown and crispy.
