1 package Italian Herb chicken sausage, roughly chopped
1 tablespoon avocado oil
1 cup asparagus tips
jarred artichoke hearts, chopped
1 12-ounce can fire-roasted peppers
1 tablespoon unsalted butter
5 whole eggs, beaten
0.25 cup fontina cheese, grated
2 scallions thinly sliced on the bias

Add avocado oil to a sauté pan and sear your chopped sausage until lightly browned, about 3-4 minutes.

Add the asparagus tips, fire-roasted peppers, and chopped artichoke hearts to the pan. Sauté until the asparagus is bright green and tender, 1-2 minutes.

Add unsalted butter and heat until melted, then pour in the eggs and scramble everything together until the eggs are just set and soft.

Remove from heat and sprinkle with grated fontina. Garnish with thinly sliced green onions and serve warm.
