1 tablespoon extra-virgin olive oil
1 package The Sausage Project Classic Roasted Chicken Sausage, sliced into ½-inch coins
4 cups seedless watermelon, cut into ¾-inch cubes
4 ounces feta cheese, cut into ½-inch cubes
3 Persian cucumbers, sliced into ½-inch rounds
¼ red onion, thinly sliced
¼ cup chopped fresh mint

Dressing

2 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice
¼ teaspoon kosher salt
Freshly ground black pepper, to taste
3 tablespoons balsamic glaze, for drizzling

Cook the sausage: Heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook for about 3 minutes per side, until golden brown. Transfer to a plate and let cool for about 10 minutes.
