Prepare the grill: Lightly oil your grill grates, then preheat the grill.

For a charcoal grill, arrange the coals to create both direct and indirect heat zones. For a gas grill, preheat one side of the grill to medium-high heat (about 400°F) and leave the other side on low or off.
