Sheet Pan Nachos With Chicken Sausage

In the big bracket of game day snacks, nothing really beats an old-school tray of nachos. The gloriously gooey cheese. The double-protein lineup of meat and beans. The cooling hits of guac and sour cream. It’s a true crowd-pleaser every time — and we’ve got a version so good you might even forget you picked Wisconsin to win March Madness.

This take riffs on the ever-viral sheet pan nacho, with our juicy Classic Roasted Chicken Sausage getting a full makeover. Give it a quick spin in the food processor (or finely chop it), cook it up with a homemade taco seasoning, then pile it onto chips with plenty of cheese, beans, and fresh toppings for an impossibly savory upgrade. Finish with sour cream, guacamole, and whatever else you love, and you’ve got a snack worthy of the Final Four.

Ingredients

Taco Seasoning

1 tablespoon chipotle powder (use half if sensitive to spice)
1 teaspoon garlic powder
1 teaspoon cumin
½ teaspoon paprika
¼ teaspoon dried basil
teaspoon cayenne (optional)
Pinch salt and pepper

Nachos

1 bag tortilla chips
1 package The Sausage Project Classic Roasted Chicken Sausage
¾ cup shredded Mexican blend cheese
1 can black beans, rinsed, drained, and seasoned
¼ jalapeño, seeded and sliced
cup pico de gallo
¼ cup red onion, diced
1 tablespoon chopped cilantro
Guacamole, to taste
Sour cream, to taste

Mix your taco seasoning spices together (unless you’re using a packet)

Add the sausage to a food processor and pulse until the desired texture is reached—we recommend it finely chopped.

Transfer the sausage to a skillet set over medium heat. Add the taco seasoning and a few tablespoons of water, then stir to combine. Cover and let simmer for a few minutes while you prepare the toppings.

Line a sheet pan with parchment paper and spread the tortilla chips in an even layer.

Top with the cooked sausage, black beans, shredded cheese, pico de gallo, red onion, jalapeños, and cilantro.

Add dollops of sour cream and guacamole over the top, then serve immediately.
